Egg & Avocado English Muffin Sandwich

1 whole egg

1 egg white

1 whole-wheat english muffin, toasted

1/4 cup avocado, mashed

1 slice of reduced fat-cheddar cheese (optional)

2 tomato slices

1. Scramble the whole egg and the egg white in a skillet coated with cooking spray.

2. Spread the mashed avocado onto the toasted english muffin.

3. Place cooked eggs on muffin and top with 1 slice reduced fat-cheddar cheese and tomato slices.
